Under current legislation, all food handlers need to have adequate food safety skills and knowledge when preparing food for sale. More information on food handling skills and knowledge is available on the Food Standards website.
The City’s Health Officers routinely check the knowledge of food handlers on topics such as safe food temperature, hand hygiene, stock control, methods of cleaning and sanitising and will also observe staff skills during inspections. Health Services can also conduct training for food handlers on the requirements of current food legislation.
